Customer Review: Must-have for the amateur pasta chef!

I started making pasta a couple years ago with a hand-cranked machine. But because the clamp was too small for my countertop, and I only have two hands (i.e. not enough to hold the thing in place, while cranking the rollers, feeding the dough in, and catching the dough coming out) it didn't come out of my kitchen cabinet too often.
I then graduated to the KitchenAid attachment for rolling pasta, and -let me tell you- nothing had changed my life so much until I bought the Villaware Ravioli Plaque!
Although pasta-making has been MUCH easier (and more frequent) with the KitchenAid attachment, ravioli making was still a rare occurence for me: I always found it hard to gauge how much filling to put in, get all the air out so it won't expand and cause my ravioli to explode in the boiling water, or even seal them properly. It also seemed wasteful as I always ended up with a ton of unusable strips of dough.
But since I got the Ravioli Plaque a few weeks ago, I not only have made several batches of cheese ravioli (a favorite!), but also a number of recipes from Mario Batali's various cookbooks, including the very fancy (and very yummy) Beef Cheek Ravioli with squab liver sauce...
Using the Plaque is SOO unbelievably easy!
-You just place a sheet of rolled out pasta dough on top, gently press in the plastic mold and then fill each indentation with the filling of your choice -no more guessing how much.
-Then, lay another sheet of pasta on top, gently press it on the filling so as to get rid of air bubbles and use the provided mini-rolling pin to cut and seal your ravioli at the same time!
Voilà! You have delicious, homemade ravioli in a matter of minutes! And, since you're the chef, the only limit is your imagination...
